Recipe: Fried Oyster Mushrooms

Today’s recipe is fried oyster mushrooms. This is one of the recipes in our upcoming guide “Cooking with Oyster Mushrooms”.  It is an easy recipe with not a lot of ingredients. You will find the fried mushrooms addictive.



  • 1 lb. fresh oyster mushrooms
  • 3 cups (700ml) of sparkling water or Sprite
  • 1 cup flour
  • 3 cups (700ml) of olive oil
  • 3 sprigs of rosemary
  • Salt and pepper
  • Lemon slices


  1. Cut the oyster mushrooms into slices about ½ inch thick, or you can leave them whole if they are small.
  2. Place the mushrooms in the sparkling water {or Sprite} to soak for about 20 minutes
  3. While they are soaking, put the flour in a shallow open container. Take the mushrooms out of the liquid and without drying them, toss them in the flour until they are well coated all over
  4. Once coated, let the mushrooms rest for about 25 minutes on a paper towel to make sure the coating will stick to them.
  5. In the meantime, heat olive oil to about 350° F (180° C) in a large saucepan over medium-high heat.
  6. Place the mushrooms carefully into the hot oil, making sure not to crowd them, along with the rosemary.
  7. Fry them until the batter is crispy and light brown and the slices are hard to touch about 3-5 minutes per side.
  8. Then take them out and place them on a paper towel to drain.
  9. Season with salt and pepper, and remove rosemary sprigs, cool them and then break them over mushrooms.
  10. Serve with lemon slices, if preferred!
